My Not-So-Secret Potluck Recipe

Dairy-Free Orchata (Mexican Rice Punch)

This is high in protein. Unfortunately, not low in carb, you really need the natural sugar for texture.


2 cups Rice

6 cups water

1 tsp ground cinnamon

1 cup sugar


  • Water rice and soak overnight (8-12 hours) in cool place
  • Scoop water and rice into a blender, fill half and half in half-way
  • Pulse 3 times
  • Add ground cinnamon
  • Blend 2 seconds
  • Pour content into a pitcher and discard rice chunks on the bottom of blender cup
  • Repeat above
  • Add sugar and stir
  • Let sit 1 hour in refrigerator and ready to serve
  • Stir slightly and don't disturb the rice particles on the bottom

To serve this refreshing summertime favorite, pour rice punch into glass and add ice.
