Not-So-Secret Potluck Recipes

Sweet Potato Pie
| Ingredients: |
5 cups of mashed sweet potatoes
4 eggs
2 cups of sugar
2 teaspoon vanilla extract
Pinch of salt
1 cup of flavored Crisco (Vegetable Shortening)
2 cans of evaporated milk (Carnation brand was used)
3 unbaked pie crust or 2 deep pie crust (expect leftover) |
| Alternatives: |
For richer taste, replace Crisco with 2 sticks of butter and heavy
cream with evaporated milk. |
| Directions: |

Boil sweet potatoes until soft, peel and mash until no lumps.

Add remainder of ingredients, beat with beater until creamy.

Pour into pie shell.

Cover edge of crust with foil strips and not touching the filling.

Bake at 425 degrees for15 minutes

Then, bake at 250 degrees for 40-50 minutes.

Test the doneness by sticking in a toothpick or raw pasta (angel hair).
